The Baddest Breakfast Sandwich

Be bad, be bold this morning with The Baddest Breakfast Sandwich. This breakfast masterpiece features two extra large eggs infused with pecan smoked bacon, topped with two slices of pecan smoked bacon, a slice of aged cheddar cheese, and garnished with bacon-aioli, red onion, baby arugula, and sun-ripened tomato.

Ingredients


  • Thomas'® Original Sandwich Size English Muffin
  • Baby arugula 
  • Tomato
  • 2 XL eggs, beaten 
  • 3 slices of pecan smoked bacon, (separated: one crumbled, two for topping.) 
  • Slice of cheddar cheese 
  • Red onion

Bacon Aioli Sauce:

  • 4 oz. chopped Pecan Smoked Bacon 
  • ¾ C mayonnaise 
  • 1 Tbsp minced garlic 
  • 2 ½ tsp lemon juice 
  • ¾ tsp salt 
  • ½ tsp ground black pepper 

Directions


  1. Begin with your Thomas'® Original Sandwich Size English Muffin split in half.
  2. Beat 2 XL eggs to perfection in a muffin tin. (butter or nonstick spray are recommended for easy release)
  3. Infuse 1 perfectly prepared slice of pecan smoked bacon, pieces should be between 1/4 and 1/2 inches wide. 
  4. Cook in oven for 7-9 minutes at 375° F (will take longer in NON convection oven). 
  5. Check internal temperature, 145° F for 15 seconds is code. (I go to 160° F, eggs are firmer and non runny)
  6. Remove egg-licious masterpiece from muffin tin, top with 2 slices of Pecan Smoked Bacon in an X pattern. Top with slice of aged cheddar cheese and slip back into oven till cheese is melted perfectly. 
  7. Remove completed egg-licious masterpiece from oven and place on one half of Thomas'® Original Sandwich Size English Muffin that is garnished with from-scratch-bacon-aioli, red onion, baby arugula and sun-ripened tomato slice. 
  8. Top with other half of Thomas'® Original Sandwich Size English Muffin.
